Why use a pizza oven?
Traditional Neapolitan pizza will have a blistered, crisp crust with a moist and soft centre with some simple toppings. The secret to achieving these textures lies in the cooking method. The pizza needs to be cooked at exceedingly high temperatures, well above 400°C, for a short amount of time, in some cases in less than 90 seconds, which is simply not possible with a conventional kitchen oven.
Pizza ovens will almost always make use of a refractory stone cooking surface for two main reasons. Firstly, it can withstand the high temperatures necessary to cook Neapolitan pizza and, secondly, this material slowly releases the heat into the food whilst spreading it evenly across the base, delivering that delicious crisp crust.
